Cauliflower couscous

Cauliflower couscous with grilled sheep halloumi and pickled lemon.

Ingredients

beurre noisette
crispy kamut
Crème fraîche
1units.itemshalloumi
Purple cauliflower
preserved lemon
200gcauliflower couscous

Preparation

  1. Briefly fry the cauliflower couscous in the beurre noisette. Grill the halloumi in a grill pan. Place the cauliflower couscous in a round ring on the plate. Slice the halloumi and place on top of the cauliflower couscous.
  2. Grate the preserved lemon over it. Sprinkle a little crispy kamut on top. Pipe the crème fraîche in between. Just before serving, grate the purple cauliflower over it.
