Brioche bread crab salad

A creamy and velvety Mornay sauce paired with a fresh and briny crab salad on a thick slice of brioche bread, baked until crispy.This sandwich exudes pure luxury.

Ingredients

Pepper and salt

500mlWhole milk
1units.itemsEgg yolk
125gGruyere grated
1Coarse mustard

Preparation

  1. Then bake the brioche bread.
  2. Cut a thick slice and fry in a pan for about three minutes on each side until lightly crispy and caramelized.

  1. For the crab salad, mix all the ingredients.
  2. Season with salt and pepper.
  3. Meanwhile, fry an egg sunny side up.

  1. Melt the butter, add the flour.
  2. Once it smells like cookies, gradually add the milk.
  3. Whisk well in between to prevent lumps.
  4. Once all the milk is added, add the mustard and cheese.
  5. Let it thicken well.
  6. When high heat is no longer needed, lower the heat and add the egg yolk.
  7. Stir well.

  1. Now start building the sandwich.
  2. Top the thick slice of toasted brioche bread with arugula, mornay sauce, crab salad, fried egg, crab salad.
  3. Serve this extravagant sandwich with a wedge of lemon, as it can add extra freshness.
