
Burgers made from red beetroot

6sunflower or rapeseed oil
30gfresh horseradish
200gpre-cooked beets

Preparation
- Briefly blend the egg white with the yogurt in a powerful blender.
- Peel the horseradish, cut into pieces, and add to the egg white with the yogurt.
- Let the blender run and add the oil drop by drop.
- Season the mayonnaise with salt and pepper.
- Cut the beets into a fine brunoise. Finely chop the shallots.
- Mix the beets, white beech mushrooms, chopped shallots, tofu, and sorghum with the beet juice in a bowl.
- Season with salt and pepper.
- Add the gelburger and stir well.
- Press the beet mixture into a ring mold and chill for at least 1 hour.
- Fry the beet burgers in a pan, and serve with horseradish mayonnaise and bread.
