Burrata tomato paste with Parma ham and truffle snow

Burrata in tomato ointment covered with Parma ham and truffle snow.

Ingredients

Olive oil
Truffle oil
Malto
truffle powder
yopol yogurt powder

Pepper
10gbalsamic vinegar
100gSun-dried tomatoes
360gPassata of cherry tomato

Burrata
Tomato paste
smoked salt
Parma ham

Preparation

  1. Mix the malto by hand with olive oil and truffle oil.
  2. Make sure the texture becomes firm.
  3. Add truffle powder and yogurt powder to taste.
  4. Pass the mixture through a sieve until it has a snow-like texture.

  1. Put all the ingredients in the pan and heat well.
  2. Blend until smooth and strain if desired.

  1. Make a mirror of the tomato paste (this is also delicious cold).
  2. Place a ball of burrata in the mirror.
  3. Top it with smoked salt and Parma ham.
