Preparation
- Mix the malto by hand with olive oil and truffle oil.
- Make sure the texture becomes firm.
- Add truffle powder and yogurt powder to taste.
- Pass the mixture through a sieve until it has a snow-like texture.
- Put all the ingredients in the pan and heat well.
- Blend until smooth and strain if desired.
- Make a mirror of the tomato paste (this is also delicious cold).
- Place a ball of burrata in the mirror.
- Top it with smoked salt and Parma ham.
- Sprinkle the snow over the dish and serve.
