What is it: a product based on maltodextrin that is created by the splitting of starch molecules (in this case tapioca). It has a low sweetness and is low in calories. Better known as a filler, but can also absorb fats (oil) well and then takes on a more solid form like snow. Use: malto can be used well to make crackers from nuts and seeds. Sprinkle a little malto over, for example, sesame seeds, mix in a little water so that the malto dissolves and smooth the mass on a baking mat. Place in the oven at 150°C until the water has evaporated and the malto is crispy around the sesame seeds.
