50gmalto (Texturas)

Preparation
- To make oil powders, you need about 50 grams of malto and 120 grams of oil. Not every oil reacts the same, so always add the oil gradually.
- Slice a chorizo sausage and fry until crispy in a pan without fat. Collect the rendered oil and mix it with the malto (we prefer to do this by hand).
- Add just enough malto until you have a powder. Sift if desired for a finer texture.
