Sugar tuile with vanilla

An ultra-thin sugar tuile.

Ingredients

250gisomalt (Sosa)
Vanilla powder

Preparation

  1. Heat 250 grams isomalt over low heat until all air bubbles have disappeared.
  2. Let cool slightly and then mix in a bit of vanilla powder.
  3. Pour the mixture thinly onto silicone paper and let it harden completely.
  4. Grind into a fine powder in a blender or food processor.
  5. Using a sieve, sprinkle this powder thinly onto a baking mat or silicone paper and melt again at 150°C until the desired tuille is formed.
