This dish consists of: - foam - dried rose petals

Ingredients

75gEgg yolk
75gcappuccino milk
1parfait d'amour liqueur
75gCream

15gIcing sugar
Egg white
Rose petals

strong coffee
parfait d'amour liqueur

Preparation

  1. Mix all ingredients in a measuring jug using an immersion blender.
  2. Pour into a siphon, charge with two cartridges, and chill until use.

  1. Dip the rose petals in egg white and dust with powdered sugar.
  2. Dry the rose petals in a dehydrator at 65°C until crispy.

  1. Warm a splash of liqueur, mix it with the hot, strong coffee, and pour into a glass.
  2. Pipe the foam onto the drink and garnish with the crispy rose petals.
