Preparation
- Mix all ingredients in a measuring jug using an immersion blender.
- Pour into a siphon, charge with two cartridges, and chill until use.
- Dip the rose petals in egg white and dust with powdered sugar.
- Dry the rose petals in a dehydrator at 65°C until crispy.
- Warm a splash of liqueur, mix it with the hot, strong coffee, and pour into a glass.
- Pipe the foam onto the drink and garnish with the crispy rose petals.
