The Caribbean rice is a delicious side dish that combines the flavors of the Caribbean into a flavorful and colorful meal.Ingredients
1cup chicken broth
2cups basmati rice
1.5cup coconut milk
Knob of butter
1.5cup pineapple juice
Caribbean spice
Salt
Bell pepper (various colors)
Padrón peppers
Coriander
Fresh pineapple
Petals
Preparation
- Wash the rice.
- Heat the pineapple juice, add the rice, and mix well.
- Then add the coconut milk, chicken broth, butter, and Caribbean spice.
- Cook the rice covered for about 12 minutes.
- Roast the bell peppers (amounts to your own preference and taste) on the barbecue (char them).
- Remove the skin and cut the flesh into pieces.
- Roast the padrón peppers (amounts to your own preference and taste) on the barbecue and cut into pieces without the seed lists.
- Clean the pineapple (amount to your own preference and taste) and grill on the barbecue.
- Cut the grilled pineapple into pieces as well.
- Mix the garnishes through the cooked rice and garnish with coriander and flower petals.
