Ceviche of sea bass with marinated pineapple and tomberry

Ceviche is the general term for dishes with raw fish that is cooked in acidic juice (tiger's milk).The citrus juice in the tiger's milk causes the proteins in the fish to coagulate (but does not kill all bacteria!) and thus the fish becomes 'cooked'. Firm fish such as cod are placed in the tiger's milk for about 6 minutes. Medium-soft types such as salmon or sea bass for about 4 minutes. Soft types like mackerel for about 1 minute. And of course, the cooking time also depends on the size of the fish.

Preparation

  1. Finely chop the garlic and ginger, squeeze the limes and orange by hand, and add the soy sauce and red chili.
  2. Mix well.

  1. Slice the red chili into thin rings.
  2. Squeeze the lime and add the juice, sugar, and pineapple to the red chili.
  3. Store chilled.

  1. Blanch the tomberries for 5 seconds.
  2. Mix lime zest, lime juice, olive oil, salt, and sugar and place the mini tomatoes in it.
  3. Store chilled.

  1. Cut the sea bass to the desired size and place it in the tiger's milk for 1 minute (depending on thickness).
  2. Cut the avocado into pieces.
  3. Place the sea buckthorn berries in a container with cold water, they will swell up.
  4. Arrange the sea bass and avocado on the plate, then add the marinated tomatoes, herring caviar, and marinated pineapple.
  5. Add a few sea buckthorn berries, some thinly sliced radish, and the carrot cream.
  6. Spoon a little tiger's milk over the dish at the end.
