Preparation
- Cook the noodles for 2 minutes until done and drain in a sieve.
- Season the noodles with Flavor.Guru Crazy Orange Rub.
- Divide the noodles into a container and store under pressure in the refrigerator.
- Let cool for about 5 hours.
- Cut the tuna into nice rectangular strips.
- Heat a non-stick pan over high heat and sear each side for 30 seconds.
- Deglaze with soy sauce.
- Immediately place the tuna in cold (ice) water to prevent further cooking.
- Pat the tuna dry and roll in Flavor.Guru Ocean Umami.
- Blend the avocado into a smooth cream.
- Briefly fry the glass noodles so they become nice and crispy like chips (180°C).
- Cut the Crazy Orange noodles into a nice rectangle and also fry for 2 minutes (180°C).
- Plate the dish with the noodles on the bottom, then the sliced tuna, and pipe some dots of avocado cream through the tuna.
- Place the glass noodles on the dish and drizzle some fruity spiciness over it with Saus.Guru Skull HOT Sauce Mexican Habanero Fever.
- Optionally use some radish and cress for extra garnish.
