Preparation
- Sauté the onion, za'atar, and garlic in the pan.
- Add the minced meat and fry until crumbly.
- Deglaze with the tomato paste and let it reduce.
- Cover the vine leaves with the tomato-minced meat mixture and heat in the oven.
- Place the hummus on the plate.
- Place the meat mixture on the hummus.
- Place the vine leaves on top and finish with lemon zest, cress, and dried broad beans.
