
Eggplant Salad

10gFresh coriander
10gFlat-leaf parsley
20gCurly parsley

Preparation
- Toast the almond slivers in the oven at about 150°C for about 8 minutes.
- Finely chop the garlic, coriander, peppers, flat and curly parsley.
- Crumble the feta by hand.
- Mix all ingredients and season with lemon zest and juice, salt, pepper, and mix with the sunflower oil.
