Eggplant Salad

Grilled eggplant provides a warm, full, and intense flavor.

We love to combine eggplant with nuts and fresh herbs in a salad and serve it with a tasty pita.

Ingredients

500gGrilled eggplant
50galmond slivers
2gGarlic
120gFeta
10gFresh coriander
10gFlat-leaf parsley
20gCurly parsley
25mlSunflower oil
Pepper
0.5units.itemsLemon zest
0.5units.itemsLemon juice
25gTahini
2units.itemspeppers
Salt

Preparation

  1. Toast the almond slivers in the oven at about 150°C for about 8 minutes.
  2. Finely chop the garlic, coriander, peppers, flat and curly parsley.
  3. Crumble the feta by hand.
  4. Mix all ingredients and season with lemon zest and juice, salt, pepper, and mix with the sunflower oil.
