Donut custard & raspberry bun

Donut bun filled with airy custard cream and whipped cream, finished with raspberry powder, freeze-dried raspberries, and edible flowers.

Ingredients

Fresh flower petals
Berliner bun / donut bun
Freeze-dried raspberry
Whipped cream
Raspberry powder
Mix for pastry cream

Preparation

  1. Let the donut buns thaw and roll them in fine sugar.
  2. Prepare the pastry cream according to the instructions on the package.
  3. Mix 1 liter of the yellow cream with 200 grams of softly whipped cream until you have a light filling.
  4. Fill the donut buns with this mixture using a piping bag and stainless steel nozzle, and pipe a swirl on top as well.
  5. Sprinkle the filled donut with raspberry powder.
  6. Crumble some of the freeze-dried raspberries over the swirl.
  7. Garnish with a few fresh flower petals.
