
Donut Malibu & dragonfruit bun
Donut bun filled with white chocolate-Malibu mousse, finished with dragon fruit powder, fresh pitahaya, coconut flakes, and edible flowers.Ingredients
Berliner bun / donut bun
300gWhite chocolate
Roasted coconut chips
70gMalibu
600gCream
6gleaf gelatin
Fresh pitahaya
Dragon fruit powder
Fresh flower petals
Preparation
- Let the donut buns thaw and roll them in fine sugar.
- Soak the gelatin sheets in cold water.
- Heat the cream together with the Malibu.
- Dissolve the squeezed gelatin in the warm cream mixture.
- Pour the mixture over the white chocolate and mix until smooth.
- Let cool and then whip until light and airy in the machine with a whisk until it becomes a pipeable mousse.
- Fill the donut buns with this mousse using a piping bag and stainless steel nozzle.
- Pipe a dollop of mousse on top of the bun as well.
- Clean the fresh pitahaya and cut the flesh into small cubes.
- Dust the donut with dragon fruit powder.
