Donut crème brûlée bun

Donut bun filled with creamy crème brûlée and finished with caramelized cane sugar for a crunchy bite.

Ingredients

Cane sugar
Berliner bun / donut bun
Crème brûlée

Preparation

  1. Let the donut buns thaw.
  2. Use a cutter to make a hole in the center of the buns.
  3. Roll the buns in fine sugar.
  4. Heat the crème brûlée mixture to 70°C.
  5. Let the mixture cool and stir regularly to keep it liquid.
  6. Fill the donut buns with the crème brûlée.
  7. Let set in the refrigerator.
  8. Sprinkle the top with a thin layer of cane sugar and caramelize it with a blowtorch until crisp.
