
Flaming orange baba
A baba is a round cake, soaked in a sweet alcoholic beverage.Ingredients
zest of 1 orange
4gDried yeast
200gFlour
70gSoft butter
1agave syrup
teaspoon of salt
5Eggs
150gWater
200gSugar
100mlorange liqueur
100gOrange juice
Preparation
- Dissolve the yeast in a little water.
- Mix all ingredients, except the eggs, in a stand mixer with the paddle attachment.
- Let it run and add the eggs one by one.
- Fill the molds ¾ full with the dough and let rise for 30 minutes at room temperature.
- Bake the dough for about 25 minutes at 200°C in the oven.
- Put all the ingredients in a pan and bring to a boil.
- Let the syrup cool before use.
- Soak the baba in the syrup and let the syrup absorb well.
- Serve with marinated orange (in orange liqueur), whipped cream, and torched meringue.
- Before serving, pour a little alcohol on top, ignite, and serve immediately.
