Flaming orange baba

A baba is a round cake, soaked in a sweet alcoholic beverage.

Ingredients

zest of 1 orange
4gDried yeast
200gFlour
70gSoft butter
1agave syrup
teaspoon of salt
5Eggs

150gWater
200gSugar
100mlorange liqueur
100gOrange juice

Preparation

  1. Dissolve the yeast in a little water.
  2. Mix all ingredients, except the eggs, in a stand mixer with the paddle attachment.
  3. Let it run and add the eggs one by one.
  4. Fill the molds ¾ full with the dough and let rise for 30 minutes at room temperature.
  5. Bake the dough for about 25 minutes at 200°C in the oven.

  1. Put all the ingredients in a pan and bring to a boil.
  2. Let the syrup cool before use.

  1. Soak the baba in the syrup and let the syrup absorb well.
  2. Serve with marinated orange (in orange liqueur), whipped cream, and torched meringue.
  3. Before serving, pour a little alcohol on top, ignite, and serve immediately.
