
Coffee and sambuca baba
A baba is a round cake, soaked in a sweet alcoholic beverage.Ingredients
4gDried yeast
teaspoon of salt
Espresso
70gSoft butter
5Eggs
200gFlour
teaspoon of agave syrup
250gcoffee
200gSugar
100mlsambuca
15gIcing sugar
75gEgg yolk
1sambuca
150gCream
Preparation
- Let the yeast rise in the espresso.
- Mix all ingredients, except the eggs, in a stand mixer with a paddle attachment.
- Let it run and add the eggs one by one.
- Fill the molds ¾ full with the dough and let rise for 30 minutes at room temperature.
- Bake the dough for about 25 minutes at 200°C in the oven.
- Put all ingredients in a pan and bring to a boil.
- Let the syrup cool before use.
- Mix all ingredients using a hand blender.
- Transfer to a siphon and charge with 2 cartridges.
- Soak the baba in the coffee syrup and let it absorb well.
- Serve the baba with a little extra syrup and the sambuca foam.
