
Fritto misto
You get the fish nice and crispy by dusting them with semola (semolina). This keeps them crunchier.Ingredients
semola semolina
smelt
squid tentacles
frying oil
Preparation
- Dredge various small fish in semola (we used smelt and squid tentacles). Slightly frozen works best.
- Fry in hot oil until crispy. Preferably do this in a small pan, as semola quickly contaminates the frying oil.
- Serve with a suitable dipping sauce.
