Grilled bananas in rum syrup

A tropical dessert where grilled bananas come together with a rich rum syrup for a warm, flavorful end to the meal.

Ingredients

100mlWater
120gButter
Hot honey
Peanut crunch
Bananas
Olive oil
250mlBacardí dark rum
100gCane sugar
Whipped cream
Freeze-dried raspberries
Coconut ice cream

Preparation

  1. Heat water and cane sugar in a saucepan until the sugar is dissolved.
  2. Add the rum and briefly flambé to let some of the alcohol evaporate.
  3. Then add the butter and let it melt. Allow the syrup to cool afterwards.
  4. Soak skewers in a mixture of water and a splash of rum.
  5. Skewer the bananas and lightly brush them with olive oil.
  6. Roast the bananas on both sides until golden brown on the barbecue.
  7. Remove them from the heat and immediately dip them in the rum syrup. Let them cool in it.
  8. Place the bananas on a platter and drizzle with extra rum syrup.
  9. Drizzle with some hot honey and garnish with peanut crunch and crumbled freeze-dried raspberries.
  10. Serve with a scoop of coconut ice cream and whipped cream.
