Grilled bananas in rum syrup
A tropical dessert where grilled bananas come together with a rich rum syrup for a warm, flavorful end to the meal.Ingredients
100mlWater
120gButter
Hot honey
Peanut crunch
Bananas
Olive oil
250mlBacardí dark rum
100gCane sugar
Whipped cream
Freeze-dried raspberries
Coconut ice cream
Preparation
- Heat water and cane sugar in a saucepan until the sugar is dissolved.
- Add the rum and briefly flambé to let some of the alcohol evaporate.
- Then add the butter and let it melt. Allow the syrup to cool afterwards.
- Soak skewers in a mixture of water and a splash of rum.
- Skewer the bananas and lightly brush them with olive oil.
- Roast the bananas on both sides until golden brown on the barbecue.
- Remove them from the heat and immediately dip them in the rum syrup. Let them cool in it.
- Place the bananas on a platter and drizzle with extra rum syrup.
- Drizzle with some hot honey and garnish with peanut crunch and crumbled freeze-dried raspberries.
- Serve with a scoop of coconut ice cream and whipped cream.
