
Jelly pearls of sweet wine
We make these pearls with sweet wines that pair perfectly with cheese, such as red port, muscat wine, and Brachetto. We gel them using agar.Ingredients
Sugar syrup
1 to 4 grams agar gelification
500gDrink of choice
silicone molds
Preparation
- Mix the drink with sugar syrup (optional).
- Add 1.5 to max. 4 grams of agar and bring to a boil while stirring.
- Pour into silicone molds (half spheres) and let set in the fridge.
- Serve at room temperature.
