Roasted onion purée with star anise

Preparation

  1. Clean the onions and cut them into half rings.
  2. Melt the butter and add the sliced onions and the star anise.
  3. Let the onions caramelize lightly and add the water and the liquid concentrate.
  4. Put a lid on the pan and cook the onions for 2 hours at 125°C.
  5. Remove the onions from the oven, remove the star anise, and reduce any cooking liquid.
