Preparation
- Pour the gin into a glass filled with ice.
- Add the tonic water and mix well.
- Garnish with the dried raspberries, rosebuds, and the crispy rhubarb stalk.
- Remove the hard parts and fibers from a rhubarb stalk.
- Slice the rhubarb stalk into thin ribbons using a cheese slicer.
- Heat raspberry syrup to boiling point and pour it directly over the rhubarb ribbons.
- Let everything cool and pat the ribbons dry.
- Twist the rhubarb ribbons into stick shapes and dry them at 70°C in a dehydrator until crispy.
