Lime chocolate glaze

Glazing is back.

Ingredients

225gWhole milk
225gglucose syrup
1Neutral oil
6Gelatin sheets
300glime chocolate

Preparation

  1. Boil the milk with the glucose. Dissolve the soaked gelatin in it.
  2. Pour this over the chocolate and mix well. Add the oil.
  3. Sieve twice (once through a sieve and once through a fine mesh strainer).
  4. Use the mixture at 35°C. Pour this over well-frozen dessert creations.
