Preparation
- Place the duck breast skin side down in a (not yet heated) frying pan and set over medium heat. The pan and the meat will heat up together. This allows the fat to slowly render from the duck.
- Cook for 6 to 10 minutes on the skin side until golden brown and crispy.
- Press the garlic, add it to the pan, and turn the duck breast. Cook for another 2 to 3 minutes. While cooking, spoon the fat over the duck.
- Sprinkle salt over the skin of the duck breast. Remove from the pan and let rest for 5 minutes.
- Slice the cucumber and the spring onion.
- Slice the duck breast.
- Place the pancakes on a plate. Lay the duck breast slices on top.
- Add some cucumber strips and Go-Tan sweet chili sauce.
- Garnish with fresh coriander and basil, and roll up the pancakes if desired.
- Pour the diluted Go-Tan asian naturals wok sauce hoisin over the pancakes.
