A savory cheese puff, in which Gruyère cheese is baked both in and on the choux pastry.

Baking the Gruyère cheese along ensures a crispy, golden-brown crust.

Ingredients

3Eggs
215mlWater
95gSifted flour
70gGruyère cheese
75gButter
Salt

Preparation

Step 1

  1. Heat the water with the butter and a little salt.
  2. Add the flour and mix into a dough.
  3. Remove from the heat and mix in the eggs one at a time.
  4. Grate and finely chop the cheese and add to the dough.
  5. Pipe onto a baking mat and bake until crispy at 200°C for about 20 minutes (depending on size).
