Preparation
- Season the red cabbage in the traditional way with an apple and a bit of cinnamon and let it cool down.
- Dry all the vegetables in a dehydrator or microwave. If using a microwave, place the vegetables on a thick napkin so the moisture can be absorbed by the paper. If using a dehydrator, place them on a mat or rack.
- After drying, grind finely in a blender, coffee grinder, or crush in a mortar.
- Brush a baking mat with olive oil. Place the obulato sheets on top.
- Carefully brush the sheets with egg white and sprinkle with the vegetable powder.
- Dry in a (drying) oven at 70°C.
