Gruyère crème brûlée
A savory crème brûlée made with Gruyère cheese, featuring of course a crispy layer of cane sugar.Cheese in the glass! A cheese platter after dinner is delicious, but can also be ‘heavy’. These cheese dishes are just a bit different and, for example, perfect to serve as an ‘intermediate course’ or even as a dessert.
Ingredients
Cane sugar
400gGrated Gruyère
400gEgg yolk
1lCream
Preparation
- Heat the cream and egg yolks and gradually add the Gruyère cheese while stirring (note: do not let it come to a boil).
- Pass the mixture through a sieve.
- Divide among the desired glasses and place them in a water bath.
- Cook in the oven at 110°C for about 35 minutes.
- Let cool and cover well.
- Caramelize with sugar just before serving.
