Herring with butterhead lettuce, avocado and apple

Zilte herring with creamy avocado, crispy lettuce, and fresh apple – a refined, lightly sweet combination for a refreshing starter.

Ingredients

apple brunoise
Potato airbag
Purple radish

Preparation

  1. Blanch the butterhead lettuce for the lettuce mousse.
  2. Refresh and puree together with the flesh of the avocado.
  3. Add the cream and fish stock and season with salt, pepper, and a few drops of lime juice. Then chill.
  4. Pour the butterhead lettuce and avocado soup into the plate.
  5. Place the cleaned herring on top.
  6. Place the apple brunoise with the furikake, potato airbag, and purple radish on the herring.
