Preparation
- Cut the beef shoulder into tartare and mix with the olive oil, salt, and pepper.
- Cut the remaining ingredients into a very fine brunoise and mix together.
- Press the tartare into a heart-shaped mold.
- Place the other chopped ingredients on top of the tartare.
- Pipe various 'dots' of piccalilli onto the tartare.
