200gAlkmaar pearl barley
180gPumpkin puree
20gEchalongue
30mlCaramelized umami intense flavours

10mlCaramelized umami intense flavours
200mlHollandaise

2mlOlive oil

30gEchalongue shallots

Preparation

  1. Finely grind pink peppercorns in a food processor and add the remaining ingredients, mix well.

  1. Chop the shallot, sauté, and add the washed pearl barley.
  2. Make a broth from caramelized umami and deglaze the pearl barley.
  3. Add pumpkin puree and stew briefly until done (the broth should be fully absorbed).

  1. Combine the ingredients and put in a siphon, charge with two cartridges.

  1. Sauté the chopped shallot in olive oil, add umami and stew until tender with a splash of water.

  1. Peel the pumpkin and cut into thin slices.
