Cod & snow crab .Tip: For the best result, briefly brine the fish in water with salt.
Ingredients
Cauliflower
1cod
4snow crab legs
8mini carrots
cauliflower purée with beurre noisette
Pepper and salt
4spring onions
Olive oil
Preparation
- Place the cod in the brine and let it brine for two hours.
- Fry the cod skin-side down and finish cooking for three minutes in an oven at 180°C.
- Place the snow crab in hot water with a little salt or in a court-bouillon for three minutes.
- Fry the baby carrots in olive oil.
- Clean the spring onion and fry in olive oil.
- Cut the cauliflower into small florets, drizzle with olive oil and sear with a blowtorch.
- Cut the cod into four pieces and place on the plate.
- Cut open the snow crab and place the meat on the plate.
- Add the baby carrots, spring onion, and roasted cauliflower florets alongside.
- Spoon a little cauliflower and beurre noisette purée next to the cod.
