3gAgar
65gisomalt sugar
500gcherry purée
15gGlucose

Preparation

  1. Mix all ingredients and blend for 20 minutes at 80°C in a thermoblender.
  2. Let the batter cool completely.
  3. Spread the batter onto a silicone drying sheet using the stencil.
  4. Dry the leaves for about 4 hours at 80°C.
  5. Immediately press between a leaf vein mold to create texture.
