50gEgg white
50gButter
45gSifted flour
Preparation
- Mix the zusto with the sifted flour, beet powder, and salt.
- Heat the butter until light brown.
- Heat the egg white to 40°C.
- Mix everything well together and then let it cool.
- Spread the batter onto a baking mat using the stencil.
- Bake the leaves at 160°C for about 8 minutes.
- Immediately press between a leaf vein mold to create texture.
