350gChicken thighs
150gwhite beech stem (Shimeji) or mushrooms
1lChicken stock
2Teriyaki sauce
100gGreen peas
500gramen noodles
1spring onion, sliced into rings
1black smoked sesame seeds
3centimeter of ginger, sliced
1red chili pepper, sliced into rings
1bok choy, cleaned
Preparation
- Combine the broth, ginger, and teriyaki sauce in a pan and gently bring to a simmer over low heat.
- Sprinkle salt and pepper on the chicken thighs and fry in a pan over low heat until crispy and golden brown.
- Briefly blanch the peas in the broth.
- Prepare the noodles according to the package instructions.
- Divide the noodles among large bowls.
- Top with pak choi, peas, white beech mushrooms (or regular mushrooms), and sliced chicken thighs.
- Pour the hot broth over and garnish with spring onion, red chili, and black sesame seeds.
