Tip: add beet juice for color and fill as desired.

Preparation

  1. Make a mound of the semola (semolina), press a well in the center, and work in the eggs one by one.
  2. Knead into a smooth dough and let rest in plastic wrap.
  3. Roll out thinly, form into ravioli, and cook until done in salted water or broth.
