Coconut mochi, coconut & rum mousse, and coconut foam shards

Delicious dessert of coconut mochi, mousse and rum. Ideal for the holidays or special occasions.

This dish consists of:

  • Mochi ice cream coconut
  • Mousse of coconut and rum
  • Coconut meringue shards

Ingredients

115gWhite chocolate
35gRum
3gleaf gelatin
300gCoconut cream 24%

100mlCoconut water
Desiccated coconut
200gSilvia egg white powder

Coconut chips
mochi ice cream coconut

Preparation

  1. Soak the gelatin sheets in water.
  2. Heat the coconut cream with the rum and dissolve the gelatin in it.
  3. Pour this mixture over the white chocolate and mix everything well.
  4. Let the mixture cool and then whip until light and airy.
  5. Spoon the mousse into a piping bag.

  1. Mix the egg white powder with the coconut water and whip until airy in, for example, a KitchenAid with a whisk.
  2. Spread the mixture thinly on a silicone baking mat.
  3. Sprinkle the grated coconut over it.
  4. Place in an oven at 80°C and let dry until crisp (about 3 hours).

  1. Pipe the coconut and rum mousse onto a plate.
  2. Place a coconut mochi ice cream in it.
  3. Arrange the meringue shards around it.
  4. Garnish with coconut chips.
