Flan of cucumber and green mustard

By using silicone molds, you can prepare certain components of your dish in advance.This saves time during the busy December month. Store the prepared component in the freezer.

Ingredients

2Agar
2green herb mustard
Sugar and salt
400mlCream
600mlCucumber juice
1Algae powder
4.5giota gelification
silicone mold donut shape
smoked fish (for example salmon and eel)

Preparation

  1. Mix cucumber with cream, algae powder, mustard, and iota. If you want the mixture to be firmer, you can add some agar.
  2. Add sugar and salt to taste. Gently heat the mixture while stirring until it just comes to a boil. Remove immediately from the heat and strain the mixture.
  3. Pour into the molds. Do not fill them completely, so you get nice rings. Cool briefly and then freeze.
  4. Place the rings on a plate, let them thaw. Serve at room temperature.
  5. Serve with smoked fish, such as hot smoked salmon, eel, and trout. Finish with pickles and beet coulis, a crispy sourdough bread chip, kombu leaf chips (dry these at 100°C until crispy), and a samphire mayonnaise.
