Cold salad of soba noodles

Soba noodles are Japanese noodles made from, among other things, buckwheat flour.

Ingredients

Coriander
fresh grated ginger
Soy sauce
Mint
Soba noodles
finely chopped cucumber
hon mirin
finely chopped spring onion

Preparation

  1. Cook the noodles in plenty of boiling water (without salt or oil) for 4 minutes. Drain, rinse with cold water, and then place them briefly in ice water to cool thoroughly and prevent them from becoming a 'dough ball'.
  2. Now mix the cold noodles with the cucumber, ginger, and spring onion.
  3. Season with some fresh coriander and mint.
  4. Make a dressing of equal parts hon mirin and soy sauce and mix this through the noodles.
