Herb cake with hot smoked salmon

Delicious as a warm starter.

Ingredients

50gfresh samphire
300gFlour
100gWarm smoked salmon
300mlButtermilk
2Eggs
salty fingers
Pepper and salt
20gFlat-leaf parsley
9gBaking soda
75gMelted butter

Preparation

  1. Sift the flour together with the baking soda. Mix this in the food processor with the eggs, buttermilk, samphire, and parsley to make a batter.
  2. Season with salt and pepper.
  3. Spoon some of this batter into a silicone mold, add some picked salmon, and fill the molds ¾ full with the batter.
  4. Bake at 180°C for 10 to 12 minutes.
  5. Serve as a warm starter with salty fingers.
