200gFermented Prestige strawberries
6gCoriander seed
50gYeast broth
Black garlic oil
Preparation
- Ferment the strawberries with 2% salt.
- Filter and collect the juice.
- Put the fermented strawberries, black pepper, and coriander seed in a saucepan and reduce by half.
- Mix 100 grams of the reduced mixture with the yeast broth and split with black garlic oil.
