285mlsourdough pancake batter
150gpork belly
10gcabbage
25gApple syrup
pinch of speculaas spices
5gBrussels sprouts *
50gButter
1Olive oil
2gSea salt
100gWhite cabbage
Preparation
- Brine the pork belly with salt, sugar, and speculaas spices for 12 hours.
- Rinse afterwards and vacuum seal. Then cook for 12 hours in a sous-vide bath at 68°C.
