
Loaded fries with pork belly and kimchi mayonnaise

Ingredients
fresh fries
pork belly sous-vide
Lime
Spring onion
kimchi mayonnaise
Preparation
- Cut the pork belly to the desired size and briefly sear in a pan.
- Add the sliced spring onion and keep warm in the pan.
- Fry the fries at 180°C until crispy.
- Spoon the pork belly with spring onion onto the fries.
- Serve with kimchi mayonnaise* and a wedge of lime.
