Loaded potatoes

Three variations of loaded potatoes, namely with wild mushrooms, pulled chicken, and pulled pork.

This recipe is for about 4 people. At Peka, they have elevated preparations with potato as the main ingredient to a true art form.

Ingredients

500ghome made potatoes
400gwild mushroom mix
100mlRed wine
Parmesan cheese
75gCrème fraîche
Thyme
Salt

Preparation

  1. Bake the home made potatoes for 10 minutes in the oven at 200°C convection.
  2. Then fry the potatoes in the frying pan.
  3. Sauté the wild mushrooms with a little olive oil until browned in the pan.
  4. Deglaze with red wine and add thyme and salt.
  5. Let the mushrooms simmer gently until the red wine has evaporated.
  6. First portion the potatoes, then top with the wild mushrooms, dollops of crème fraîche, and grated Parmesan cheese.

  4. First portion the potatoes, then top with the pulled chicken and barbecue sauce.
