Marshmallow from the mini barbecue

Roasting your own marshmallow at the table.

Ingredients

Fine sugar
300gSilvia egg white powder
150gWater
50gpomegranate compound
Borrel BBQ
50gsanatine

Preparation

  1. Mix the cold water with sanatine and let it soak for 5 minutes.
  2. Heat to 50°C (the microwave is easiest for this), so the sanatine dissolves well.
  3. Mix this with the egg white powder and the compound.
  4. Whip the mixture in a machine with a whisk on the highest speed until a firm foam forms.
  5. Pipe strips of the mixture onto fine sugar and let set (outside the fridge).
  6. Cut the marshmallow into the desired shape and serve with the Borrel BBQ, so the guest can roast the marshmallow at the table.
