400mlMilk
40gMelted ghee
6gMatcha powder
10gSugar
500gForest fruit mix
1Lime
200ggelling sugar
Hazelnut praline ice cream

Preparation
- Mix the matcha powder with the sugar.
- Whisk this into the milk using a whisk.
- Beat the eggs and mix them into the milk until smooth.
- Add the flour and stir until you have a smooth batter.
- Add the salt and melted ghee and mix again until smooth.
- Let the batter rest for 25 minutes.
- Then bake the crêpes from the batter.
- Heat the forest fruits together with the jam sugar in a pan.
- Let the mixture simmer gently until the sugar is dissolved and the fruit releases its juices.
- Finally, add the lime juice and stir into the sauce.
- Crush the blueberry cheesecake cookies into a fine crumble.
- Serve the crêpes with the forest fruit sauce, a scoop of hazelnut praline ice cream, and sprinkle with the cookie crumble.
