Matcha crêpes with forest fruits & cookies

Green matcha crêpes with fresh berry sauce, creamy ice cream and cheesecake cookies, a colourful dessert.

Ingredients

Pinch of salt
5Eggs (M)
200gFlour
400mlMilk
40gMelted ghee
6gMatcha powder
10gSugar

500gForest fruit mix
1Lime
200ggelling sugar

Hazelnut praline ice cream
Blueberry cheesecake cookies

Preparation

  1. Mix the matcha powder with the sugar.
  2. Whisk this into the milk using a whisk.
  3. Beat the eggs and mix them into the milk until smooth.
  4. Add the flour and stir until you have a smooth batter.
  5. Add the salt and melted ghee and mix again until smooth.
  6. Let the batter rest for 25 minutes.
  7. Then bake the crêpes from the batter.

  1. Heat the forest fruits together with the jam sugar in a pan.
  2. Let the mixture simmer gently until the sugar is dissolved and the fruit releases its juices.
  3. Finally, add the lime juice and stir into the sauce.

  1. Crush the blueberry cheesecake cookies into a fine crumble.
  2. Serve the crêpes with the forest fruit sauce, a scoop of hazelnut praline ice cream, and sprinkle with the cookie crumble.
