
Pomegranate meringues
Delicious small meringues with the explosive flavor of pomegranate thanks to the use of pomegranate compound.Ingredients
120gWater
300gSilvia egg white powder
50gpomegranate compound
Silica gel
Preparation
- Mix all ingredients with a whisk and then whip until airy in a Kitchenaid with a whisk (grease-free).
- Pipe dollops of the mixture and let dry at 85°C for about 2 hours.
- Store in boxes, optionally with some desiccants (silica gel beads).
