
Mustard soup made from potato gratin

3lbeef or vegetable stock
250gCoarse mustard
150gButter

300mlCooking cream
250gsmoked bacon strips
25gCurry powder

Preparation
- Combine the stock and potato gratin in a pan.
- Blend the mixture with a hand blender until smooth.
- Put the butter in another pan and let it foam.
- Cut the onions into half rings.
- Add the onions and let them gently simmer and sweat without coloring.
- Add the bacon strips and let them color over medium heat.
- Add the mustard and curry powder over low heat and let it cook for 5 minutes to reduce acidity.
