Mustard soup made from potato gratin

The base of potato gratin gives this mustard soup with bacon a delicious flavor.

Ingredients

3lbeef or vegetable stock
250gCoarse mustard
150gButter

300mlCooking cream
250gsmoked bacon strips
25gCurry powder

Preparation

  1. Combine the stock and potato gratin in a pan.
  2. Blend the mixture with a hand blender until smooth.
  3. Put the butter in another pan and let it foam.
  4. Cut the onions into half rings.
  5. Add the onions and let them gently simmer and sweat without coloring.
  6. Add the bacon strips and let them color over medium heat.
  7. Add the mustard and curry powder over low heat and let it cook for 5 minutes to reduce acidity.
