Green tea mousse

Airy matcha mousse with a subtle white chocolate glaze. Elegant dessert with an Oriental touch and refined tea flavor.

Ingredients

80gEgg yolk
100gFine granulated sugar
330gWhole milk
15gmatcha (green tea powder)
10ggelatin (5 sheets)
320gloosely whipped cream

20gWhite chocolate
4gmatcha
350gneutral covering jelly

Preparation

  1. Whip the yolks with the sugar.
  2. Heat the milk with the green tea powder and dissolve the gelatin in it.
  3. Add the egg yolk mixture and bring the whole to 82°C (in a thermoblender or while whisking over low heat) until nicely thickened.
  4. Cool the mixture down (but do not let it set).
  5. Fold in the semi-whipped cream.
  6. Pipe into silicone molds, smooth off, and freeze to make unmolding easier.

  1. Melt all ingredients together over low heat, chill until use.
  2. Let the mousse thaw and spoon a dollop of glaçage on top.
