
Mozzarella rolls with burrata & Parma ham

Mozzarella

58gFull-fat yogurt

Preparation
- Cut slices of the mozzarella.
- Heat the mozzarella in the oven at 100°C for about 6 minutes between two baking mats or in a pan with warm water.
- Roll out the mozzarella with a rolling pin to the desired thickness and let cool.
- Put the egg white and yogurt in a measuring cup.
- Add the oil and blend with a hand blender until it reaches yogurt thickness.
- Season with pepper and salt.

- Fill the slices of mozzarella with Parma ham, arugula, and burrata.
- Season with pepper and salt.
- Roll up the mozzarella as you would a wrap and cut into nice "slices".
- Garnish with the mayonnaise and some fresh cress or flowers.
